carrot cupcakes

These are definitely the easiest cupcake I've made.  The maple cream cheese frosting is a really nice change from the basic cream cheese frosting that normally accompanies this type of cake.  Instead of adding vanilla flavoring to the butter cream/cream cheese frosting I added maple flavoring.  Perfection!

Oh yum. I would love the recipe! I have a carrot cake recipe with maple cream cheese frosting that I think I found on Smitten Kitchen but it's not exactly "easy."

These look amazing! I was wondering how/what adjustments you make for the high altitude? I live in Colorado at close to 7k feet and everyone always says to just add 1/4 cup of flour to any recipe. Do you think that's a good general rule to follow? I have tried a lot of my grandma's cookie recipes here and they certainly fall flat and aren't fluffy like I like them. Just wondering if the flour rule would help with the altitude.
