I splurged on the large tub of Greek yogurt at S&R (Philippine Costco) this week so I could try my hand at frozen yogurt in my new Cuisinart ice cream maker. I wasn't thrilled with the recipes for frozen yogurt in the little recipe booklet that came with the product (called for corn syrup) and I checked online. All the recipes were calling for 5 or more cups of yogurt and I knew I didn't have that left after I let my yogurt eating monkeys devour half the vat of yogurt between Monday and Wednesday. So I did what I do best and made up my own recipe.
It's simple and perfect and I'm doing it every time I can get this Greek yogurt.
Melt-your-face-good Vanilla Frozen Yogurt by Sara
1 cup whole milk
3/4 cup granulated sugar
2 cups strained plain Greek yogurt
1 1/2 teaspoons vanilla extract
I let the yogurt strain through my homemade version of a cheesecloth for about 30 minutes. I used a very thin cotton dish towel (almost like a piece of cotton bedding). It did the trick just fine. Since I was using thick strained Greek yogurt to begin with I didn't need to strain it as long. Basically, use a Greek yogurt. It's the best consistency and flavor.
Next I mixed all the ingredients until the sugar has dissolved and then refrigerated it for an hour. After it was nice and cold I poured it into the frozen freezer bowl and turned the machine on. In less than 10 minutes the churning was done and we had the most amazing bowls of frozen yogurt I've ever tasted. It was extremely creamy and smooth. Next time I am going to lower the sugar to 1/2 cup to see if I can get this recipe even healthier for me and my kids. Lord knows they don't need any more sugar.
The girls weren't going to waste a drop!
